Jams also make delicious toppings for ice cream and pudding or as cookie or cake filling.
Jams and most sweet preserves are completely prepared before being spooned into canning jars.
They must be sealed at once, while very hot, as quickly as they are filled.
Making raspberry jam and other sweet spreads is an ideal way to preserve fruit that may be unsuited for canning or freezing due to being over-ripe or blemished but not spoiled.
Measure 4 cups into a large pot and combine with sugar.
Follow standard procedure for making jam with liquid pectin.
Makes 9- 8 ounce glasses.
Frozen Raspberry Recipe
1 quart raspberries
4 cups sugar
2 tablespoons lemon juice
½ bottle liquid pectin
Directions:
Wash and crush raspberries.
Measure 2 cups of berries into a bowl and mix in sugar.
Mix lemon juice with pectin in a separate bowl and add to fruit.
Stir for 3 minutes.
Pour into clean, cold jars and seal.
Let stand at room temperature for 24 hours.
Then put raspberry jam in the freezer.
Makes 6- 8 ounce jars.
Apricot and Raspberry Jam Recipe
Ingredients:
2 pounds fresh apricots
1 ½ cups raspberries
¼ cup water
4 ½ cups sugar
Instructions:
Add water to apricots which have been pared, pitted, and sliced.
Add sugar and raspberries.
Cook until jam has thickened.
Pour into sterilized canning jars to within ¼ inch of top of jar.
Put two-piece caps firmly on jars.
Process in boiling water bath 10 minutes.
This raspberry jam recipe yields 4 half-pints.
Cherry and Raspberry Jam Recipe
4 cups pitted cherries
4 cups crushed raspberries
8 cups sugar
1 cup water
Directions:
Cook the cherries in the water until the skins are tender.
Add the raspberries and the sugar and boil the mixture until thick.
Pour into sterilized canning jars and seal with lids while hot.
Triple Berry Jam Recipe
This raspberry jam recipe includes a combination of any three of the following: raspberries, blackberries, blueberries, boysenberries, dewberries, gooseberries, and loganberries.
Yields about 3 pints.
Ingredients:
9 cups crushed berries
6 cups sugar
Instructions:
Combine berries and sugar in a large pot.
If seedless jam is preferred, crushed berries may be heated until soft and pressed through a food mill.
Bring mixture gradually to a boil, stirring until sugar dissolves.
Cook rapidly to gelling point.
As jam thickens, stir often to prevent sticking.
Remove from heat.
Skim foam if needed.
Spoon heated jam into awaiting hot jars.
Leave ¼ inch room at the top.
Tighten on two-piece canning lids.
Process berry jam for 15 minutes in boiling water bath canner.
Mango Raspberry Jam Recipe
This raspberry jam recipe yields about 7 half-pints.
Ingredients:
3 cups chopped, peeled, pitted mangoes
1 ½ cups crushed red raspberries
2 tablespoons lemon juice
1 pack Sure-Jell
5 ½ cups sugar
Directions:
Combine raspberries, mangoes, Sure-jell, and lemon juice in a large pot.
Stirring frequently, slowly bring to a boil over high heat.
