How Long Before Potatoes Ready to Eat?

How long before potatoes are ready to dig up and eat?

ANSWER:

The general answer is 2-4 months. It depends on the weather, variety of potato, growing conditions, etc.

However, if you plant the potatoes on top of the ground by layering straw as the plant grows, you may be able to harvest some early baby potatoes without disturbing the rest of the plant.
